Product uses

Sodium alginate (E401) is a product that is ideally used in milk-based products, sauces,

creams, desserts and ice creams, in which it helps maintain a creamy texture

and smooths by slowing the development of ice crystals.


Dosage:

Dairy products: 0.1-0.5%; Sauces: 0.5-1.0%; Desserts: 0.5-1.0%


Advantages:

Thickener, gelling agent, stabilizer and suspending agent.


Mode

for use:

Sodium alginate can be added directly or after preparing a premix with water. In both cases, it must first be dispersed with a little sugar or other powdered ingredient.


Shelf life 24 months in original packaging

Store in a dry place at temperatures not exceeding 25°C
