Deglutinated wheat starch is a native gluten-free starch, produced with select raw materials and natural methods, without the addition of enzymes or additives. It has a high liquid absorption capacity, forming a viscous dough. It is also an ideal ingredient for use in gluten-free preparations (desserts, pasta, bread, biscuits).
