There tara gum E417 has thickening, gelling, and stabilizing properties. It hydrates completely and performs its functions best when heated, although it is also partially effective in cold systems.


Dosage:

Ice cream, sorbets: 0.05 - 0.15%

Sauces and emulsified sauces: 0.1 - 0.5%

Desserts, puddings and creams: 0.05 - 0.2%

Baked goods: 0.3 - 0.5%

Meat products: 0.05 – 0.1%

Shelf life 24 months in original packaging

Store in a dry place at temperatures not exceeding 25°C
